Chivo picante ( Spicy goat meat stew) is very popular in the Dominican Republic (goat meat is even considered a special treat). The secret to this delicacy is fresh, wild oregano. Of course, the local lore tells us that the goats feed on the wild oregano, seasoning themselves, while they still breathe and walk.
